Professional vs Consumer graphics

is it fair to benchmark professional cards with consumer gaming cards ?, i am keen in understanding more whether a GTX 480 will outperform my quadro5000 on MAYA and ADOBE

If you are only interested in performance with 2 applications, then you are better using those 2 applications as a benchmark.

Although the hardware is often nearly the same in consumer card and "pro" cards, the device drivers can be significantly different.
